Gujiya

Preparation Time: 17 minutes

Mode: Convection

Contents:

Dough: 1 cup Maida, 2 tablespoons ghee, water as required

Filling: 1 cup shredded coconut, 1 cup grated khoya, ¾ cup jaggery powder, ½ teaspoon elaichi powder, chopped almonds, cashews and kishmish

For brushing: 2 tablespoons of oil

Method:

Mix maida and ghee and knead until you get a soft dough. Let it rest covered for about 15 minutes, then knead it again.

Divide into small balls, roll into thin circles and place in Gujiya mould. Add filling, cover and cut off excess.

Brush with oil. Preheat the oven (200°C) in convection mode for 5 minutes.

Arrange the gujiyas on a crisp plate, place on the grill rack and cook at 200°C for 12 minutes, turning halfway through. Serve hot.

Shakarpara

Preparation Time: 19 minutes

Mode: Convection

Contents:

2½ cups Maida, ¾ cup ghee, ½ cup cream, 1 cup jaggery powder, ½ cup milk, 2 tablespoons oil for brushing

Method:

Mix jaggery, ghee, cream, milk and flour. Rest for 30 minutes.

Roll out the dough to 1cm thickness and cut into 2cm Shakkarpara shapes.

Preheat the oven to 200°C for 5 minutes in convection mode. Place it on a baking tray and brush it with oil.

Bake at 200°C for 14 minutes, turning halfway through. Cool and store in an airtight container.

Nankhatay

Preparation Time: 10 minutes

Mode: Convection

Contents:

1½ cups Maida, ½ cup besan, 1 cup honey syrup, 100g butter or dal, ½ teaspoon baking soda

Method:

Cream butter and honey syrup. Add Besan, Maida and baking soda; Create a dough.

Shape into medium-sized balls and place on a crispy plate.

Bake in convection mode at 170°C for 10 minutes. Serve hot or cold.

Chivda

Preparation Time: 8 minutes

Mode: Micro mode

4 cups thin poha, ¾ cup raw peanuts, ½ cup chana dal, ¾ teaspoon cumin seeds, ¾ teaspoon mustard seeds, 1 teaspoon sesame seeds, ½ cup cashews, ½ cup coconut slices, 1 tbsp. tablespoon raisins, curry leaves, 2 teaspoons cracked red pepper, ¼ teaspoon turmeric powder, a pinch of hing, salt and oil to taste.

Method

In a microwave-safe bowl, add all the ingredients except poha, cashews, coconut and raisins. 3 minutes in the microwave.

Add remaining ingredients, mix and microwave for 5 minutes, stirring twice. Serve hot.

Coconut Barfi

Preparation Time: 9 minutes

Mode: Micro mode

Contents:

3 cups grated coconut, ½ cup melted ghee, 1 cup milkmaid, 2 cups milk, ½ teaspoon cardamom powder

Method:

Mix clarified butter and coconut in a microwave-safe bowl. Microwave for 3 minutes, stirring every minute.

Add milk, cardamom powder and milkman. Cook in the microwave for 6 minutes, stirring twice. Serve hot or cold.

Gajar Halwa

Preparation Time: 12 minutes

Mode: Micro mode

Contents:

3 cups grated carrots, 1 cup grated mawa, ½ cup honey, ½ cup condensed milk, 1 cup milk, cardamom, peanut flakes, almonds, raisins, ¼ cup ghee

Method:

In a microwave-safe bowl, mix carrots, mawa, honey and ghee. Microwave on high for 6 minutes.

Add the remaining ingredients, mix and microwave for another 6 minutes. Serve hot.
