Kazinform reported that Kantsev offers a different culinary experience and a new perspective on Kazakh cuisine by combining contemporary technology, trends and traditional Kazakh products.

“It was a wonderful day when two cuisines came together, French cuisine and modern Kazakh cuisine, which took its first steps in its own home,” said Kantsev.

The menu includes a dessert made with dried fruits of Shymkent; low-cooked beef brain with a pillow of spinach and jusai, edamame beans and half-cooked onions; wormy camel meat manti (traditional large meatballs) (Kazakh national dairy product) meat tartare marinated in truffle aioli with sauce as well as unagi and sliced radishes.

Simonin is the author of the book “La cuisine d’un chef engagé” (The Private Chef’s Kitchen in English). It elevates French cuisine worldwide by promoting social and environmentally friendly gastronomy.

“Culinary friendship is an open exchange with no boundaries, no restrictions, for those who are open to culture and cuisine. It is not nice to host a chef from Kazakhstan here in Paris,” Simonin said.

Kazakhstan’s Ambassador to France and Monaco Gulsara Arystankulova, Deputy Mayor of Paris Pierre-François Logereau, President of the French Association of Foreign Trade Consultants Sophie Sidos and Honorary President of QazElles Kazakh Women’s Association in France Larisa Indzhudzhyan attended the event.

“QazElles Kazakh Women’s Association in France aims to contribute to the trend of rapprochement between the two countries through this project and gastronomic diplomacy; This is especially important after President Kassym-Jomart Tokayev’s visit to Paris earlier this month. This unique experience with a Michelin-starred restaurant is huge for Kazakhstan’s hospitality industry and we hope it will lead to further collaborations with France’s best restaurants,” said Indzhudzhyan.
