New Italian restaurant with Chicago connections opens in West Palm Beach

Hailing from the Chicago area, restaurant Osteria by Capri held a soft opening at the Hilton Palm Beach PBI in early October.

Named after small, bistro-style restaurants in Italy, Osteria by Capri is helmed by chef Joey Capri in partnership with Cicero Hospitality Group and celebrates the bold flavors of Capri’s birthplace, Calabria, Italy.

Using family recipes passed down through generations, some of the dishes include homemade rigatoni, Nonna meatballs, pork chop alla capri, and lobster diavolo.

These expertly prepared dishes are prepared using only fresh ingredients. For this purpose, there is no freezer at Osteria by Capri. “We go and buy everything fresh,” Capri said, adding that they don’t just go to the freezer when they run out of a particular meal. “When it comes out, it comes out.”

Discovering her love for cooking at a young age, Capri opened her first restaurant with her mother Annamaria in 1984, when she was only 16 years old. He has been operating restaurants in the greater Chicago area ever since.

Osteria from Capri basically started when Fadi Osmano, Cicero Hospitality Group’s vice president of development and acquisitions, stopped by Capri Lounge & Grill in Willow Springs, Illinois. during the epidemic.

Osmano said the Willow Springs restaurant was offering takeout even though nearly everything was closed at the time.

Osmano stopped by for homemade rigatoni with crumbled sausage alla vodka and was very impressed. So much so that he thought to himself: “We should take this man to our hotel.” Osmano was referring to the Cicero-operated DoubleTree Suites by Hilton in nearby Downers Grove.

Although Osmano quickly became a regular at Capri Lounge & Bar and friends with Capri, it would take several years to work out the details to get him to DoubleTree.

Then one day Osmano called Capri and said, “Get ready, you’re moving.” Osteria by Capri opened in March 2023 at the DoubleTree in Downers Grove.

So impressed with the food and service, Cicero Hospitality decided to open another location at its West Palm Beach hotel, the Hilton Palm Beach PBI.

The staff began training at the restaurant in mid-August under the direction of chef Capri and mixologist Giovanna Rovito.

Capri said he commuted between Chicago and West Palm Beach and stayed in South Florida for about two weeks to oversee the operation. Capri said chef Diego Diaz is the full-time chef at the resort, although he is on site frequently.

Focusing on freshness, Osteria in West Palm Beach makes all of its pasta in-house, except for the rigatoni, which is shipped fresh from Downers Grove.

A meal wouldn’t be complete without dessert, and Osteria has plenty of desserts, including tiramisu. However, Capri had high praise for the banana grower and finished tableside.

Never compromising on portions, Capri said one of the things her mother always emphasized was “let them go home so they remember you.” “You never left hungry and you never left without a food box,” he said.
